This easy-to-make salad, appetizer, or snazzy snack from the new book might well convert you to carbless cooking:

    Shrimp and Mushroom Salad
    4 cups fresh mushrooms
    1/3 cup mayonnaise
    1 pound shrimp, cooked, cleaned, and cooled
    1 tablespoon lemon juice
    3/4 teaspoon curry powder
    3/4 cup chopped celery
    1/4 teaspoon pepper
    1/2 cup sour cream
    1/8 teaspoon salt

    In a large bowl, combine mushrooms, shrimp, and celery.

    In a medium bowl combine sour cream, mayonnaise, lemon juice, curry powder, pepper, and salt, stirring well.

    Add sour cream mixture to mushroom, shrimp, and celery mixture and toss to coat.

    Refrigerate for one hour and serve.
